
Good question, I don’t recall ever getting an answer, but her cake was on regular rotation on the dessert menu at the Seaward Inn. I baked it weekly. It’s a perfect, old-fashioned cake recipe, complete with a cooked vanilla frosting. This cake delivers a perfect rich chocolate taste with a tender and dense cake texture. Guests would arrive at the Inn for their multi-week stays and immediately ask if Ginny’s chocolate cake was on the dessert menu for dinner that evening. This cake had a reputation and people looked forward to indulging. Now you can too. The recipe is below. For reference, I use Ghirardelli’s bittersweet chocolate and the cooked frosting recipe, using vanilla extract, instead of maple.

The fork is a United Airlines fish scale pattern. I have a drawer full of airline flatware. I love it. My mother got me started collecting it. One year for Christmas, Keith me a set of 6 each (knife, fork spoon) of the Concord’s business class flatware. It is very cool. 😎
